Description

A hearty and creamy turkey pumpkin chili that combines ground turkey with pumpkin puree and spices for a comforting meal.


Ingredients

  • 1 lb ground turkey
  • 1 cup pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup corn (fresh or frozen)

Instructions

  1. In a large pot, cook the ground turkey over medium heat until browned.
  2. Add the onion and garlic, cooking until soft.
  3. Stir in the pumpkin puree, black beans, diced tomatoes, chicken broth, corn, chili powder, cumin, salt, and pepper.
  4. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  5. Remove from heat and stir in the sour cream before serving.
