A delicious and creamy pasta salad with a ranch flavor and taco ingredients.

- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed and drained
- 1/2 cup diced red onion
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1 tbsp taco seasoning
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cooled pasta, cherry tomatoes, corn, black beans, and red onion.
- Add shredded cheddar cheese to the mixture.
- In a separate bowl, mix ranch dressing and taco seasoning.
- Pour the dressing over the pasta salad and mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad can be made a day in advance.
- Feel free to add other vegetables or proteins.
