Description

A delicious and creamy pasta salad with a ranch flavor and taco ingredients.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1/2 cup diced red onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 tbsp taco seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooled pasta, cherry tomatoes, corn, black beans, and red onion.
  3. Add shredded cheddar cheese to the mixture.
  4. In a separate bowl, mix ranch dressing and taco seasoning.
  5. Pour the dressing over the pasta salad and mix well.
  6. Season with salt and pepper to taste.
  7. Chill in the refrigerator for at least 30 minutes before serving.

  • This salad can be made a day in advance.
