- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 1 packet (1 oz or 28 g) ranch seasoning mix
- 8 oz (225 g) cream cheese, softened
- 3 cloves garlic, minced
- 2 cups (480 ml) chicken broth
- 8 oz (225 g) penne pasta
- 1 cup (100 g) grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Place the boneless chicken breasts in the bottom of the crockpot and sprinkle the ranch seasoning mix evenly over the chicken.
- Cut the softened cream cheese into cubes and place them on top of the seasoned chicken. Add the minced garlic.
- Pour the chicken broth over the chicken and cream cheese mixture.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
- Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot.
- Add the uncooked penne pasta to the crockpot about 20 minutes before serving. Stir well and cover.
- Once the pasta is cooked, stir in the grated Parmesan cheese until melted and well combined.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or on the stovetop.
- For freezing, do so before adding the pasta.
