Description

Creamy Apple and White Cheddar Soup is a comforting and flavorful dish that combines the sweetness of apples with the richness of white cheddar cheese.


Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups peeled and chopped apples
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded white cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add chopped apples and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes or until apples are soft.
  6. Puree the soup using an immersion blender or in batches in a countertop blender.
  7. Return the soup to the pot and stir in the heavy cream.
  8. Add shredded white cheddar cheese and stir until melted.
  9. Season with salt and pepper to taste.
  10. Serve warm, garnished with additional cheese if desired.
