Ingredients

- 12 lasagna noodles
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can diced tomatoes
- 2 cups spinach
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a large pot, brown the ground beef with onion and garlic.
- Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper; bring to a boil.
- Reduce heat and stir in heavy cream and spinach; cook until spinach wilts.
- Incorporate ricotta cheese and half of the mozzarella cheese.
- Break lasagna noodles into pieces and add to the pot; simmer for 10 minutes.
- Serve hot, topped with remaining mozzarella and Parmesan cheese.
Notes
- Feel free to add other vegetables as desired.
- Use ground turkey for a leaner option.
- Store leftovers in the refrigerator for up to three days.
