Creamy Alfredo Lasagna Soup

A comforting and creamy soup with layers of lasagna flavors.


Ingredients

  • 12 lasagna noodles
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can diced tomatoes
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook lasagna noodles according to package instructions; drain and set aside.
  2. In a large pot, brown the ground beef with onion and garlic.
  3. Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper; bring to a boil.
  4. Reduce heat and stir in heavy cream and spinach; cook until spinach wilts.
  5. Incorporate ricotta cheese and half of the mozzarella cheese.
  6. Break lasagna noodles into pieces and add to the pot; simmer for 10 minutes.
  7. Serve hot, topped with remaining mozzarella and Parmesan cheese.

  • Feel free to add other vegetables as desired.
  • Use ground turkey for a leaner option.
  • Store leftovers in the refrigerator for up to three days.
