Description

A rich and creamy chicken chili made in a crockpot with cream cheese.


Ingredients

  • 2 lbs chicken breast
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet ranch dressing mix
  • 1 block cream cheese (8 oz)
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Place chicken breast at the bottom of the crockpot.
  2. Add black beans, corn, diced tomatoes, and chicken broth.
  3. Sprinkle ranch dressing mix, chili powder, cumin, and garlic powder over the top.
  4. Place cream cheese on top of the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken using two forks and stir everything together before serving.

  • Serve with tortilla chips or bread.
  • Add toppings like cheese, avocado, or cilantro as desired.
