Description

A tangy and sweet dessert featuring a buttery crust topped with cranberry and lemon filling.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh cranberries
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour and powdered sugar. Cut in butter until crumbly.
  3. Press the mixture into the bottom of a greased 8-inch square pan.
  4. Bake for 15 minutes or until lightly golden.
  5. In another bowl, combine cranberries, granulated sugar, eggs, lemon juice, zest, baking powder, and salt.
  6. Pour the cranberry mixture over the baked crust.
  7. Bake for an additional 25 minutes or until set.
  8. Cool completely before slicing into bars.

Notes

  • Store leftovers in the refrigerator.
  • Can substitute frozen cranberries if fresh are unavailable.
  • For a sweeter taste, adjust the sugar in the filling.
