- 8 ounces brie cheese
- 1 cup fresh cranberries
- 4 ounces pancetta, diced
- 2 tablespoons fresh thyme leaves
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry and fit it into a tart pan.
- Cut the brie into slices and arrange it evenly over the pastry.
- In a skillet, cook the pancetta until crispy, then drain excess fat.
- Add cranberries and thyme to the skillet, cooking until cranberries begin to burst.
- Spread the cranberry mixture over the brie.
- Brush the edges of the pastry with beaten egg.
- Bake for 25-30 minutes or until the pastry is golden brown.
- Let it cool slightly before serving.
