- 3 lbs beef roast
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together cranberry sauce, balsamic vinegar, olive oil, garlic, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the beef roast.
- Place the roast in a roasting pan and pour any remaining sauce over it.
- Roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Let the roast rest for 10-15 minutes before slicing.

- Adjust cooking time based on the size of the roast.
- Serve with mashed potatoes or vegetables.
