Ingredients

  • 3 lbs beef roast
  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together cranberry sauce, balsamic vinegar, olive oil, garlic, salt, pepper, rosemary, and thyme.
  3. Rub the mixture all over the beef roast.
  4. Place the roast in a roasting pan and pour any remaining sauce over it.
  5. Roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Let the roast rest for 10-15 minutes before slicing.
