Twice-baked sweet potatoes filled with a flavorful mixture of cranberries and apples.
Ingredients

- 4 medium sweet potatoes
- 1 cup cooked apple, diced
- 1 cup dried cranberries
- 1/4 cup brown sugar
- 1/4 cup butter, softened
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash sweet potatoes and pierce with a fork.
- Bake sweet potatoes for 45-60 minutes until tender.
- Let cool slightly, then cut in half and scoop out the insides into a bowl.
- Add apple, cranberries, brown sugar, butter, cinnamon, nutmeg, and salt to the sweet potato flesh.
- Mash the mixture until smooth.
- Stuff the sweet potato skins with the mixture.
- Bake for an additional 20 minutes until heated through.
Notes
- Use fresh apples for a better texture.
- Adjust sweetness based on your preference.
- Can be made ahead and reheated.
