Description

Twice-baked sweet potatoes filled with a flavorful mixture of cranberries and apples.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked apple, diced
  • 1 cup dried cranberries
  • 1/4 cup brown sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash sweet potatoes and pierce with a fork.
  3. Bake sweet potatoes for 45-60 minutes until tender.
  4. Let cool slightly, then cut in half and scoop out the insides into a bowl.
  5. Add apple, cranberries, brown sugar, butter, cinnamon, nutmeg, and salt to the sweet potato flesh.
  6. Mash the mixture until smooth.
  7. Stuff the sweet potato skins with the mixture.
  8. Bake for an additional 20 minutes until heated through.
