Description
A hearty stew combining the flavors of cranberry, apple, and beef.
Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 1 cup fresh cranberries
- 2 medium apples, peeled and diced
- 1 onion, chopped
- 3 carrots, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion, garlic, and carrots; sauté until softened.
- Return beef to the pot.
- Add cranberries, apples, broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Serve hot.
Notes
- Adjust seasoning according to taste.
- Serve with crusty bread.
- This stew tastes better the next day.
