Description

A hearty stew combining the flavors of cranberry, apple, and beef.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 cup fresh cranberries
  • 2 medium apples, peeled and diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion, garlic, and carrots; sauté until softened.
  5. Return beef to the pot.
  6. Add cranberries, apples, broth, thyme, rosemary, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Serve hot.
