- 2 pounds beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 8 cups beef broth

- 1 tablespoon balsamic vinegar
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup Gruyère cheese, shredded
- Baguette slices for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the short ribs and brown on all sides.
- Remove the ribs and set aside.
- Add onions and cook until caramelized, about 20 minutes.
- Stir in garlic and cook for 1 minute.
- Add the short ribs back to the pot.
- Pour in beef broth, balsamic vinegar, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove short ribs, shred the meat, and return to the soup.
- Season with salt and pepper.
- Serve hot with baguette slices topped with Gruyère cheese, melted under the broiler.
