Description

A quick and easy cottage cheese chicken salad sandwich that’s perfect for lunch.


Ingredients

Scale
  • 1 cup cooked chicken, shredded
  • 1/2 cup cottage cheese
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • 4 slices whole grain bread
  • Leafy greens for serving

Instructions

  1. In a bowl, combine shredded chicken, cottage cheese, celery, red onion, mayonnaise, and mustard.
  2. Mix well and season with salt and pepper.
  3. Spread the chicken salad mixture onto two slices of whole grain bread.
  4. Add leafy greens on top of the chicken salad.
  5. Place the other two slices of bread on top to make sandwiches.
  6. Cut sandwiches in half and serve.
