A quick and easy cottage cheese chicken salad sandwich that’s perfect for lunch.
Ingredients

- 1 cup cooked chicken, shredded
- 1/2 cup cottage cheese
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 2 tablespoons mayonnaise
- 1 tablespoon mustard
- Salt and pepper to taste
- 4 slices whole grain bread
- Leafy greens for serving
Instructions
- In a bowl, combine shredded chicken, cottage cheese, celery, red onion, mayonnaise, and mustard.
- Mix well and season with salt and pepper.
- Spread the chicken salad mixture onto two slices of whole grain bread.
- Add leafy greens on top of the chicken salad.
- Place the other two slices of bread on top to make sandwiches.
- Cut sandwiches in half and serve.

- Use leftover chicken for quicker preparation.
