Description

Delicious coffee cake muffins perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar.
  3. Add the eggs and vanilla, mixing well.
  4. In another bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with sour cream.
  6. Mix until just combined.
  7. In a small bowl, mix brown sugar and chopped nuts for the topping.
  8. Fill muffin cups halfway with batter, sprinkle with topping, then add more batter to fill.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool before serving.
