Coconut Mochi Cake is a chewy and sweet dessert made with coconut milk and glutinous rice flour.

- 2 cups glutinous rice flour
- 1 cup sugar
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1 teaspoon baking powder
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together glutinous rice flour, sugar, and baking powder.
- Add coconut milk and water to the dry ingredients and stir until smooth.
- Fold in shredded coconut.
- Pour the mixture into a greased 9×9 inch baking dish.
- Bake for 45-50 minutes or until the top is golden and a toothpick comes out clean.
- Let cool before cutting into squares.
Notes
- Serve warm or at room temperature.
- This cake can be stored in an airtight container for up to 3 days.
