Instructions
- In a large skillet, combine coconut milk, lime juice, lime zest, garlic, and ginger.
- Bring the mixture to a gentle simmer over medium heat.
- Season salmon fillets with salt and pepper.
- Place salmon in the skillet, skin side down, and cover.
- Poach the salmon for about 10-15 minutes, or until cooked through.
- Remove the salmon from the skillet and plate.
- Drizzle some of the poaching liquid over the salmon and garnish with cilantro.
