- 1 can coconut milk
- 2 cups vegetable broth
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 cup mushrooms, sliced
- 1 cup spinach
- 1 cup dumplings (store-bought or homemade)
- 1 tablespoon fresh cilantro, chopped
- Salt to taste
Instructions
- In a large pot, combine coconut milk and vegetable broth.
- Add red curry paste, soy sauce, and lime juice. Stir well.
- Bring the mixture to a simmer over medium heat.
- Add mushrooms and cook for 5 minutes.
- Add spinach and dumplings. Cook until dumplings are heated through.
- Season with salt and stir in cilantro before serving.
Notes
- Adjust the spiciness by adding more or less curry paste.
- Feel free to add other vegetables like bell peppers or carrots.
- Serve with lime wedges for extra flavor.
