Ingredients

  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 1 cup dumplings (store-bought or homemade)
  • 1 tablespoon fresh cilantro, chopped
  • Salt to taste

Instructions

  1. In a large pot, combine coconut milk and vegetable broth.
  2. Add red curry paste, soy sauce, and lime juice. Stir well.
  3. Bring the mixture to a simmer over medium heat.
  4. Add mushrooms and cook for 5 minutes.
  5. Add spinach and dumplings. Cook until dumplings are heated through.
  6. Season with salt and stir in cilantro before serving.

Notes

  • Adjust the spiciness by adding more or less curry paste.
  • Feel free to add other vegetables like bell peppers or carrots.
  • Serve with lime wedges for extra flavor.
