Ingredients

  • 2 chicken breasts, cut into strips
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together flour, salt, pepper, and garlic powder.
  3. Dip chicken strips in the flour mixture, then in beaten eggs, and finally coat with a mixture of coconut and breadcrumbs.
  4. Place the coated chicken on a baking sheet.
  5. Bake for 20-25 minutes until golden and cooked through.
  6. In another bowl, combine mayonnaise, sweet chili sauce, and sriracha to make the sauce.
  7. Serve the chicken with the creamy bang bang sauce.
