Description

Cinnamon Sugar Raspberry Hand Pies are a delightful treat that combines the sweetness of ripe raspberries with a warm, flaky crust, enhanced by a hint of cinnamon.


Ingredients

  • 2 cups all-purpose flour (plus extra for dusting)
  • 1/2 cup unsalted butter (chilled and cubed)
  • 1/4 cup sugar (plus extra for sprinkling)
  • 1/4 teaspoon salt
  • 46 tablespoons cold water
  • 1 cup fresh raspberries (washed and drained)
  • 1 teaspoon ground cinnamon
  • 1 egg (beaten with 1 tablespoon of water for egg wash)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, sugar, and salt. Add the chilled, cubed unsalted butter and work it into the flour until it resembles coarse crumbs.
  2. Gradually add cold water, one tablespoon at a time, mixing gently until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. In a medium bowl, gently mash the raspberries with the remaining sugar and ground cinnamon until well combined.
  4. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick and cut out circles using a round cutter.
  5. Place a tablespoon of raspberry filling in the center of each dough circle, fold over to create a half-moon shape, and seal the edges.
  6. Brush the tops with egg wash, sprinkle with sugar and cinnamon, and place on a parchment-lined baking sheet.
  7. Preheat the oven to 375°F (190°C) and bake for 20-25 minutes until golden brown.
  8. Let cool on a wire rack and serve warm or at room temperature.

Notes

  • For gluten-free, use gluten-free all-purpose flour.
  • For vegan, use plant-based butter and a flax egg for the egg wash.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • To reheat, bake at 350°F (175°C) for about 10 minutes.
