Delicious chocolate coffee cream cupcakes topped with rich frosting.
Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup brewed coffee
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup heavy cream for frosting
- 1/4 cup powdered sugar for frosting
- 1 tablespoon cocoa powder for frosting
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
- Add softened butter, eggs, brewed coffee, and vanilla extract. Mix until smooth.
- Pour batter into lined cupcake tins, filling each about two-thirds full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely.
- In a separate bowl, whip heavy cream until soft peaks form.
- Add powdered sugar and cocoa powder to the whipped cream. Mix until combined.
- Frost the cooled cupcakes with the cream mixture.
Notes
- Store cupcakes in the refrigerator.
- Best served chilled.
- Can substitute coffee with milk if desired.
