Description

Delicious chocolate coffee cream cupcakes topped with rich frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup brewed coffee
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream for frosting
  • 1/4 cup powdered sugar for frosting
  • 1 tablespoon cocoa powder for frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
  3. Add softened butter, eggs, brewed coffee, and vanilla extract. Mix until smooth.
  4. Pour batter into lined cupcake tins, filling each about two-thirds full.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cupcakes cool completely.
  7. In a separate bowl, whip heavy cream until soft peaks form.
  8. Add powdered sugar and cocoa powder to the whipped cream. Mix until combined.
  9. Frost the cooled cupcakes with the cream mixture.

Notes

  • Store cupcakes in the refrigerator.
  • Best served chilled.
  • Can substitute coffee with milk if desired.
