Description

A creamy and cheesy casserole made with chicken, rice, and queso.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup queso cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, cooked rice, queso, black beans, corn, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  3. Mix well and transfer to a greased baking dish.
  4. Top with shredded cheddar cheese.
  5. Bake for 25-30 minutes or until cheese is bubbly and golden.
  6. Let cool for a few minutes before serving.

  • Feel free to add your favorite vegetables.
  • You can use leftover chicken for quicker preparation.
