A creamy and cheesy casserole made with chicken, rice, and queso.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 cup queso cheese
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1/2 cup diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, cooked rice, queso, black beans, corn, diced tomatoes, garlic powder, onion powder, salt, and pepper.
- Mix well and transfer to a greased baking dish.
- Top with shredded cheddar cheese.
- Bake for 25-30 minutes or until cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables.
- You can use leftover chicken for quicker preparation.
