Description

Cherry Cobbler Muffins are delicious, soft muffins filled with juicy cherries and topped with a crumbly streusel.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen cherries, pitted
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the cherries gently.
  6. In a small bowl, combine brown sugar, flour, and cinnamon for the streusel.
  7. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Sprinkle the streusel mixture on top of each muffin.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Let cool slightly before serving.

Notes
