Cherry Cobbler Muffins are delicious, soft muffins filled with juicy cherries and topped with a crumbly streusel.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen cherries, pitted
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour (for streusel)
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the cherries gently.
- In a small bowl, combine brown sugar, flour, and cinnamon for the streusel.
- Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Sprinkle the streusel mixture on top of each muffin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool slightly before serving.
Notes
- Use fresh cherries for the best flavor.
- Store leftovers in an airtight container.
- These muffins freeze well for up to 3 months.
