Description

A creamy and flavorful potato soup with cheddar cheese, garlic, and herbs.


Ingredients

  • 4 cups of diced potatoes
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of chopped onion
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic; sauté until translucent.
  3. Add diced potatoes and vegetable broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in heavy cream, cheddar cheese, thyme, and parsley; mix well.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy.

Notes

  • Adjust the thickness by adding more or less broth.
  • Garnish with extra cheese or herbs if desired.
