Description

A savory chicken cobbler topped with cheddar biscuits.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine shredded chicken, chicken broth, mixed vegetables, garlic powder, onion powder, and half of the cheddar cheese.
  3. Transfer the chicken mixture to a baking dish.
  4. In another bowl, mix flour, baking powder, and salt.
  5. Add milk and melted butter to the flour mixture and stir until combined.
  6. Spoon the biscuit mixture over the chicken mixture in the baking dish.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Bake for 25-30 minutes or until the biscuits are golden brown.

Notes

  • Use rotisserie chicken for convenience.
  • Frozen mixed vegetables can be used.
  • Adjust seasoning to taste.
