Description

A comforting cauliflower chicken soup that is hearty and full of flavor.


Ingredients

  • 2 cups cauliflower florets
  • 1 pound chicken breast, diced
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, and sauté until soft.
  3. Add carrots and cook for another 5 minutes.
  4. Add diced chicken and cook until browned.
  5. Stir in cauliflower, thyme, salt, and pepper.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat and simmer for 20 minutes until cauliflower is tender.
  8. Blend the soup if you prefer a creamy texture.
  9. Serve hot and enjoy.
