Ingredients

- 2 cups of rice
- 1 lb chicken thighs, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can coconut milk
- 2 cups chicken broth
- 2 tsp paprika
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 2 green onions, sliced
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chicken and cook until browned on all sides.
- Remove the chicken and set aside.
- Add onion, garlic, and bell pepper to the pot and sauté until soft.
- Stir in the rice, followed by coconut milk and chicken broth.
- Add paprika, thyme, salt, black pepper, and cayenne pepper.
- Return the chicken to the pot, cover, and simmer for 25-30 minutes until rice is cooked.
- Fluff the rice and garnish with green onions before serving.
Notes
- Adjust spices to your taste.
- Serve with lime wedges for added flavor.
