Description

A flavorful and hearty dish featuring chicken cooked with rice, spices, and vegetables inspired by Caribbean cuisine.


Ingredients

  • 2 cups of rice
  • 1 lb chicken thighs, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 tsp paprika
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 2 green onions, sliced

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chicken and cook until browned on all sides.
  3. Remove the chicken and set aside.
  4. Add onion, garlic, and bell pepper to the pot and sauté until soft.
  5. Stir in the rice, followed by coconut milk and chicken broth.
  6. Add paprika, thyme, salt, black pepper, and cayenne pepper.
  7. Return the chicken to the pot, cover, and simmer for 25-30 minutes until rice is cooked.
  8. Fluff the rice and garnish with green onions before serving.

Notes

  • Adjust spices to your taste.
  • Serve with lime wedges for added flavor.
  • Store leftovers in an airtight container in the fridge.
