Delicious candy cane flavored whipped shortbread cookies.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/4 cup crushed candy canes
- Peppermint sprinkles for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the butter and powdered sugar until light and fluffy.
- Add the vanilla and peppermint extracts, mixing well.
- Gradually add the flour and cornstarch, mixing until combined.
- Fold in the crushed candy canes.
- Scoop tablespoon-sized amounts of dough and place them on a baking sheet lined with parchment paper.
- Sprinkle peppermint sprinkles on top of each cookie.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container.
- Using room temperature butter helps achieve the best texture.
- You can adjust the amount of crushed candy canes for more or less mint flavor.
