Delicious candy cane flavored whipped shortbread cookies.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 cup crushed candy canes
  • Peppermint sprinkles for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and powdered sugar until light and fluffy.
  3. Add the vanilla and peppermint extracts, mixing well.
  4. Gradually add the flour and cornstarch, mixing until combined.
  5. Fold in the crushed candy canes.
  6. Scoop tablespoon-sized amounts of dough and place them on a baking sheet lined with parchment paper.
  7. Sprinkle peppermint sprinkles on top of each cookie.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
