Ingredients

  • 1 lb (450 g) shrimp, peeled and deveined
  • 1 lb (450 g) smoked sausage, sliced (such as Andouille)
  • 1 bell pepper, diced (any color)
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz or 410 g) diced tomatoes, undrained
  • 4 cups (1 liter) chicken broth
  • 2 tablespoons Cajun seasoning
  • 1/4 cup (15 g) green onions, chopped (for garnish)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (optional, for sautéing)

Instructions

  1. Prepare the ingredients by peeling and deveining the shrimp, slicing the sausage, and dicing the vegetables.
  2. Sauté the sausage in olive oil over medium heat for about 5 minutes until browned (optional).
  3. Combine all ingredients in the slow cooker, including the sautéed sausage, and stir well.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the shrimp and stir gently.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For freezing, do so before adding shrimp; it can last up to 3 months.
