- 1 lb (450 g) shrimp, peeled and deveined
- 1 lb (450 g) smoked sausage, sliced (such as Andouille)
- 1 bell pepper, diced (any color)
- 1 medium onion, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz or 410 g) diced tomatoes, undrained
- 4 cups (1 liter) chicken broth
- 2 tablespoons Cajun seasoning
- 1/4 cup (15 g) green onions, chopped (for garnish)
- Salt and pepper to taste
- 2 tablespoons olive oil (optional, for sautéing)
Instructions
- Prepare the ingredients by peeling and deveining the shrimp, slicing the sausage, and dicing the vegetables.
- Sauté the sausage in olive oil over medium heat for about 5 minutes until browned (optional).
- Combine all ingredients in the slow cooker, including the sautéed sausage, and stir well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the shrimp and stir gently.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For freezing, do so before adding shrimp; it can last up to 3 months.
- Adjust seasoning before serving for the best flavor.
