Description
Delicious chocolate truffles with a festive blue coating.
Ingredients

- 8 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/4 cup blue candy melts
- 1/4 cup crushed peppermint
Instructions
- Heat the heavy cream in a saucepan until simmering.
- Remove from heat and add chopped dark chocolate.
- Stir until smooth, then mix in vanilla extract.
- Refrigerate mixture for 2 hours until firm.
- Scoop out small portions and roll into balls.
- Melt blue candy melts in a microwave-safe bowl.
- Dip each truffle into the melted candy and place on parchment paper.
- Sprinkle crushed peppermint on top before the coating sets.
- Chill for another 30 minutes before serving.

- Store truffles in an airtight container.
- Can be made a day in advance.
