Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blackberries, halved

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together butter, brown sugar, and granulated sugar.
  3. Add egg and vanilla extract, mix until well combined.
  4. In another bowl, combine oats, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the blackberries gently.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until edges are golden brown.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Store cookies in an airtight container for up to one week.
  • Substitute blackberries with other berries if desired.
  • For a chewier cookie, add an extra tablespoon of butter.
