Description

A rich and moist chocolate cake layered with creamy peanut butter frosting.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
  5. Stir in boiling water until well combined.
  6. Pour batter into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then remove from pans to cool completely.
  9. For the frosting, beat peanut butter and butter until smooth.
  10. Add powdered sugar and heavy cream, beat until creamy and spreadable.
  11. Layer the cakes with frosting in between and on top.

Notes

  • Store in an airtight container.
  • Can be refrigerated for up to 5 days.
  • Use a serrated knife to level the cakes if necessary.
