Beet Salad with Feta

Description

A refreshing salad featuring roasted beets and feta cheese.


Ingredients

Scale
  • 4 medium beets, roasted and diced
  • 100g feta cheese, crumbled
  • 2 cups arugula
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 45-60 minutes until tender.
  3. Once cooled, peel and dice the beets.
  4. In a large bowl, combine roasted beets, arugula, and walnuts.
  5. Drizzle olive oil and balsamic vinegar over the salad.
  6. Add crumbled feta cheese.
  7. Season with salt and pepper to taste.
  8. Toss gently to mix all ingredients.

Notes

  • Can substitute goat cheese for feta if preferred.
  • Serve chilled or at room temperature.
  • Add other vegetables like cucumber or carrots for variation.
