Description
A refreshing salad featuring roasted beets and feta cheese.
Ingredients

- 4 medium beets, roasted and diced
- 100g feta cheese, crumbled
- 2 cups arugula
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in foil and roast for 45-60 minutes until tender.
- Once cooled, peel and dice the beets.
- In a large bowl, combine roasted beets, arugula, and walnuts.
- Drizzle olive oil and balsamic vinegar over the salad.
- Add crumbled feta cheese.
- Season with salt and pepper to taste.
- Toss gently to mix all ingredients.
Notes
- Can substitute goat cheese for feta if preferred.
- Serve chilled or at room temperature.
- Add other vegetables like cucumber or carrots for variation.
