Ingredients

  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook ground beef with onions and garlic until browned.
  3. Add cumin, chili powder, and salt to the beef mixture.
  4. Soften tortillas in a pan or microwave.
  5. Fill each tortilla with beef mixture and roll them up.
  6. Place rolled tortillas in a baking dish.
  7. Pour enchilada sauce over the top and sprinkle with cheese.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.
