Baked Sweet Potato Zucchini Tots are a healthy and delicious snack or side dish made with sweet potatoes and zucchini, baked to perfection.
Ingredients

- 2 medium sweet potatoes, peeled and grated
- 1 medium zucchini, grated
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine grated sweet potatoes and zucchini.
- Add breadcrumbs, parmesan, garlic powder, onion powder, salt, pepper, and beaten egg. Mix well.
- Form the mixture into small tots and place them on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden brown, flipping halfway through.
- Remove from the oven and let cool slightly before serving.
Notes
- For a vegan version, substitute the egg with a flax egg.
- These tots can be frozen before baking for later use.
- Serve with your favorite dipping sauce.
