Description

Baked Sweet Potato Zucchini Tots are a healthy and delicious snack or side dish made with sweet potatoes and zucchini, baked to perfection.


Ingredients

  • 2 medium sweet potatoes, peeled and grated
  • 1 medium zucchini, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine grated sweet potatoes and zucchini.
  3. Add breadcrumbs, parmesan, garlic powder, onion powder, salt, pepper, and beaten egg. Mix well.
  4. Form the mixture into small tots and place them on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until golden brown, flipping halfway through.
  6. Remove from the oven and let cool slightly before serving.

Notes

  • For a vegan version, substitute the egg with a flax egg.
  • These tots can be frozen before baking for later use.
