Ingredients

- 4 large eggs
- 2 sheets of puff pastry
- 1 cup of ricotta cheese
- 1/2 cup of grated Parmesan cheese
- Salt to taste
- Pepper to taste
- Fresh chives for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry sheets and cut them into circles.
- Place the circles on a baking sheet lined with parchment paper.
- Spoon ricotta cheese onto the center of each pastry circle.
- Crack an egg on top of the ricotta.
- Sprinkle Parmesan cheese, salt, and pepper over the eggs.
- Bake for 20-25 minutes or until the eggs are set and the pastry is golden.
- Garnish with fresh chives before serving.
