Description

Avgolemono soup is a Greek dish made with chicken, rice, and a lemon-egg sauce that gives it a creamy texture.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup rice
  • 2 eggs
  • 1/4 cup lemon juice
  • Salt to taste

Instructions

  1. In a pot, bring the chicken broth to a boil.
  2. Add the rice and cook until tender, about 15 minutes.
  3. In a bowl, whisk together the eggs and lemon juice.
  4. Gradually add a cup of hot broth to the egg mixture, whisking constantly.
  5. Slowly pour the egg mixture back into the pot, stirring continuously.
  6. Add the shredded chicken and season with salt and pepper.
  7. Heat gently without boiling, then serve hot.
