Description
Apricot Glazed Chicken in a Slow Cooker is a delightful dish that combines sweet and savory flavors, perfect for family dinners or gatherings.
Ingredients
Scale
- 1.5 lbs skinless, boneless chicken thighs (about 6–8 thighs)
- 1 cup apricot preserves
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon black pepper
- 2 tablespoons sesame oil
- 2 green onions, sliced (for garnish, optional)
- 1 tablespoon sesame seeds (for garnish, optional)
Instructions
- In a medium bowl, combine the apricot preserves, soy sauce, minced garlic, grated ginger, black pepper, and sesame oil. Stir well until all ingredients are thoroughly mixed.
- Place the chicken thighs in the bottom of the slow cooker. Pour the apricot glaze mixture over the chicken, ensuring that each piece is well coated.
- Cover the slow cooker with its lid and set it to cook on low for 6-7 hours or on high for 3-4 hours. The chicken is done when it is tender and easily pulls apart with a fork.
- If you prefer a slightly crispy texture, once the chicken is cooked, preheat your oven broiler. Carefully transfer the chicken thighs to a baking sheet lined with parchment paper. Brush with additional apricot glaze from the slow cooker and broil for 3-5 minutes, or until the edges are caramelized and crispy.
Notes
- Use low-sodium soy sauce for a healthier option.
- Replace chicken thighs with chicken breasts for a leaner option, but be mindful that they may cook faster.
- For a vegan version, substitute chicken with tofu or tempeh.
- Experiment with different fruit preserves like peach or mango for a unique flavor twist.
