Instructions

  1. In a medium bowl, combine the apricot preserves, soy sauce, minced garlic, grated ginger, black pepper, and sesame oil. Stir well until all ingredients are thoroughly mixed.
  2. Place the chicken thighs in the bottom of the slow cooker. Pour the apricot glaze mixture over the chicken, ensuring that each piece is well coated.
  3. Cover the slow cooker with its lid and set it to cook on low for 6-7 hours or on high for 3-4 hours. The chicken is done when it is tender and easily pulls apart with a fork.
