Description

Delicious and healthy apple beet muffins, perfect for breakfast or a snack.


Ingredients

  • 1 cup whole wheat flour
  • 1 cup grated apple
  • 1 cup grated cooked beetroot
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine sugar, oil, and eggs.
  4. Add grated apple and beetroot to the wet mixture.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Spoon the mixture into muffin tins.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Can substitute sugar with honey or maple syrup.
