Delicious almond meltaway cookies that are soft and buttery.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/2 cup ground almonds
- 1 teaspoon almond extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream the butter and powdered sugar together until light and fluffy.
- Mix in almond extract.
- In another bowl, combine flour, ground almonds, and salt.
- Gradually add the dry ingredients to the butter mixture and mix until just combined.
- Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container.
- These cookies can be dusted with additional powdered sugar after cooling.
- For a stronger almond flavor, increase almond extract to 1.5 teaspoons.
