Description

Delicious almond meltaway cookies that are soft and buttery.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 cup ground almonds
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream the butter and powdered sugar together until light and fluffy.
  3. Mix in almond extract.
  4. In another bowl, combine flour, ground almonds, and salt.
  5. Gradually add the dry ingredients to the butter mixture and mix until just combined.
  6. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container.
  • These cookies can be dusted with additional powdered sugar after cooling.
  • For a stronger almond flavor, increase almond extract to 1.5 teaspoons.
