Description

Ingredients

  • 2 medium zucchinis, diced
  • 1 cup mushrooms, sliced
  • 4 large eggs
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced zucchini and sliced mushrooms to the skillet.
  3. Sauté for about 5 minutes until vegetables are tender.
  4. In a bowl, whisk together eggs and milk. Season with salt and pepper.
  5. Pour the egg mixture over the vegetables in the skillet.
  6. Cook, stirring gently, until eggs are set.
  7. Garnish with fresh parsley before serving.
