Description

A delicious and healthy vegan buffalo chickpea salad sandwich.


Ingredients

Scale
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons buffalo sauce
  • 1 tablespoon lemon juice
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • Salt and pepper to taste
  • 4 slices whole grain bread
  • Lettuce leaves for serving

Instructions

  1. In a bowl, mash the chickpeas with a fork.
  2. Add vegan mayonnaise, buffalo sauce, lemon juice, celery, and red onion to the bowl.
  3. Mix until well combined.
  4. Season with salt and pepper to taste.
  5. Spread the mixture onto two slices of bread.
  6. Add lettuce leaves on top, then close the sandwich with the remaining bread slices.
  7. Cut in half and serve immediately.

Notes

  • This salad can be stored in the refrigerator for up to 3 days.
  • Adjust the amount of buffalo sauce to control the spice level.
  • Serve with additional veggies or chips on the side.
