Description
A delicious and healthy vegan buffalo chickpea salad sandwich.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1/4 cup vegan mayonnaise
- 2 tablespoons buffalo sauce
- 1 tablespoon lemon juice
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- Salt and pepper to taste
- 4 slices whole grain bread
- Lettuce leaves for serving
Instructions
- In a bowl, mash the chickpeas with a fork.
- Add vegan mayonnaise, buffalo sauce, lemon juice, celery, and red onion to the bowl.
- Mix until well combined.
- Season with salt and pepper to taste.
- Spread the mixture onto two slices of bread.
- Add lettuce leaves on top, then close the sandwich with the remaining bread slices.
- Cut in half and serve immediately.
Notes
- This salad can be stored in the refrigerator for up to 3 days.
- Adjust the amount of buffalo sauce to control the spice level.
- Serve with additional veggies or chips on the side.
