Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cucumber, sliced
- 1 avocado, sliced
- 1 carrot, julienned
- 1/2 bell pepper, thinly sliced
- 2 green onions, chopped
- 1 sheet nori, cut into strips
- soy sauce for serving
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let it sit for 10 minutes.
- Mix rice vinegar, sugar, and salt in a small bowl; stir until dissolved.
- Fold vinegar mixture into the cooked rice.
- In a bowl, layer the sushi rice, cucumber, avocado, carrot, bell pepper, and green onions.
- Top with nori strips and serve with soy sauce.

- Adjust the vegetables based on your preference.
- Try adding tofu or edamame for extra protein.
