- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla bean paste
- 3 large eggs
- 1 cup heavy cream
- 1/4 cup sugar for topping
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of cupcake liners.
- In another bowl, beat cream cheese and sugar until smooth.
- Add vanilla bean paste and eggs, mixing well.
- Fold in heavy cream until combined.
- Pour the cheesecake mixture over the crust in each cupcake liner.
- Bake for 20-25 minutes until set.
- Cool completely in the fridge for at least 2 hours.
- Before serving, sprinkle sugar on top and caramelize with a torch.

- Ensure cupcakes are completely cool before caramelizing the tops.
