Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla bean paste
  • 3 large eggs
  • 1 cup heavy cream
  • 1/4 cup sugar for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of cupcake liners.
  4. In another bowl, beat cream cheese and sugar until smooth.
  5. Add vanilla bean paste and eggs, mixing well.
  6. Fold in heavy cream until combined.
  7. Pour the cheesecake mixture over the crust in each cupcake liner.
  8. Bake for 20-25 minutes until set.
  9. Cool completely in the fridge for at least 2 hours.
  10. Before serving, sprinkle sugar on top and caramelize with a torch.
