Description

Taco Stuffed Baked Potatoes are a delicious and filling dish that combines the flavors of tacos with the comfort of baked potatoes.


Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sliced olives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. While the potatoes bake, brown the ground beef in a skillet.
  5. Add the taco seasoning and water as directed on the packet.
  6. Cook until heated through.
  7. Remove the potatoes from the oven and let them cool slightly.
  8. Cut the potatoes in half and scoop out some of the insides.
  9. Mix the potato insides with the taco meat and cheese.
  10. Fill the potato skins with the mixture.
  11. Top with sour cream, tomatoes, green onions, and olives.
  12. Return to the oven for 10 minutes to melt the cheese.

Notes

  • You can customize toppings to your preference.
  • Use leftover taco meat if available.
  • This dish can be made vegetarian by using beans instead of meat.
