- 4 large russet potatoes
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup sliced olives
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- While the potatoes bake, brown the ground beef in a skillet.
- Add the taco seasoning and water as directed on the packet.
- Cook until heated through.
- Remove the potatoes from the oven and let them cool slightly.
- Cut the potatoes in half and scoop out some of the insides.
- Mix the potato insides with the taco meat and cheese.
- Fill the potato skins with the mixture.
- Top with sour cream, tomatoes, green onions, and olives.
- Return to the oven for 10 minutes to melt the cheese.
