Description

Ingredients

Instructions

  2. Toss sweet potato slices with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes until tender.
  4. While sweet potatoes roast, toast baguette slices in the oven until golden.
  5. In a bowl, mix goat cheese with honey until smooth.
  6. Spread the goat cheese mixture on toasted baguette slices.
  7. Top with roasted sweet potato slices and garnish with fresh thyme.
